My personal (skinny and macro friendly) twist on Smore's brownies

Yes, I am currently suffering from massive brownie & baking addiction.
I am a raging food addict (anyone could've figured that out already) but lately & since I am on vacation (lies, I should be studying for my finals) I am having more time to bake and create and am loving it.


I am also addicted to chocolate but that's another story.


Anyway, today's recipe consists of my own personal twist (due to being in a country where Smore's aren't a thing) on Smore's brownies and even though they came out not even looking slightly like Smore's they sure are pretty damn tasty.


This recipe is, like my Oreo brownies, super simple and fast to make and turns out to be super rich and tasty (yes, it also has Mayo in it), the only difference is that you put crackers scattered inside instead of Oreos and drop some marshmallows on top and voilá, kind-of-Smore's-brownies on your plate!

Unfortunately when I made them the first time (in the pictures) I put my marshmallows in too early so they melted completely and the brownies ended up kind of ugly (but tasty anyway!) and I ended up having to dress them up for the pictures :-)


I thought about adding chocolate chunks and/or chocolate chips on top but the brownie batter itself is pretty darn chocolaty and I don't want these to become calorie monsters so I resisted the temptation.

Here goes the recipe all laid out for you:
110kcal Smore's brownies!

Makes 15 :-)

What you’ll need:
  • 180g (1 & 1/2 cups) self-raising flour
  • 15g (1 & 1/2 tbsp) baking powder
  • 1 large egg
  • 70g egg whites
  • 80g (3/4 of a cup) cocoa powder
  • 130g (1/2 a cup + 4 tbsp) Stevia sweetener
  • 10g (1 tsp) vanilla paste or liquid extract
  • 80ml (1/3 of a cup + 1 tbsp) skim milk
  • 50g (4tbsp) fat free mayo
  • 150ml (2/3 of a cup) room temperature water
  • 15-20 plain cookies (I used a typical brand from my country because we don’t have graham crackers here but you can and should use graham crackers!)
  • 15 Marshmallows

How to:
  1. Pre-heat oven to 180ºC / 350ºF and grease a rectangular baking pan;
  2. In a stand mixer mix together the egg, the egg whites, the vanilla paste and the sweetener until fully mixed;
  3. Add in the milk and then the mayo;
  4. In a separate bowl sift together flour, cocoa powder and baking powder and mix well together;
  5. Start mixing into the stand mixer the flour mixture and water one at a time, starting and ending with the flour mixture;
  6. Crack all the cookies roughly and unevenly and pour in the batter incorporating with a spatula;
  7. Pour the batter in the prepared baking pan and put in the pre-heated oven for about 25/30 minutes or until a toothpick inserted in the middle comes out crumbless and clean BUT in the final 5/10 minutes open the oven, drop the marshmallows (I cut each marshmallow in half to use less marshmallows and make them look like more) on top of the brownie, close the oven and finish cooking.

Macros (remember, macros differ with brands and ingredients!):
110 kcal
18g carbs
2g fat
4g protein
(4g fiber)
(6g sugar)

Yes, it's possible... Skinny OREO Chocolate Brownies!

Yes, you read the title right.
Skinny
Oreo
Chocolate
Brownies
(Can you say that 10 times fast?)

They look like this:


And taste absolutely ridiculously delicious.
They are also super easy to make and bake and anyone can do them, you just need 2 bowls and a baking tray, ta-da.


They have no butter or oil in them BUT they do have one *weird* ingredient some of you may frown upon when you read it, but don't deny it before you try it. Just look at one more photo of them. 


They take about 10 minutes to prepare and 25/30 of baking so they're pretty fast to make and the recipe is pretty plain and made up of simple ingredients and makes 15 of them!

Ok and now to the point; here goes the recipe and what-not:


110kcal Oreo chocolate brownies!

What you’ll need:

  • 70g egg whites;
  • 80g (3/4 of a cup) cocoa powder;
  • 130g (1/2 a cup + 4 tbsp) Stevia sweetener OR double the amount (and the calories!) white sugar;
  • 10g (1 tsp) vanilla paste or liquid extract;
  • 80ml (1/3 of a cup + 1 tbsp) skim milk
  • 50g (4tbsp) fat free mayo*;
  • 150ml (2/3 of a cup) room temperature water;
  • 15 Oreo cookies;
*Yes, Mayo, deal with it. You can't even feel the slightest taste in the finished product!

 

How to actually make them:
  • Pre-heat oven to 180ºC / 350ºF and grease a rectangular baking pan;
  • In a stand mixer mix together the egg, the egg whites, the vanilla paste and the sweetener until fully mixed;
  • Add in the milk and then the mayo;
  • In a separate bowl sift together flour, cocoa powder and baking powder and mix well together;
  • Start mixing into the stand mixer the flour mixture and water one at a time, starting and ending with the flour mixture;
  • In the baking pan pour about 1/3 of the batter and place in the oven for 5 to 7 minutes with the air circulation on (if you have air circulation, if not just make it about 10/15 minutes);
  • Afterwards take it out, drop the oreo cookies evenly spaced out so one goes into each brownie square when they’re cut, pour the rest of the batter over them spreading it evenly apart to cover all the cookies and pop them in the oven for another ±20 minutes!

Macros (remember, macros differ with brands and ingredients!):
110 kcal
17g Carbs
3g fat
4g protein
(4g fiber)


So there you go: it's that simple!

Hope you actually try them and let me know how it went and how you liked them. At my place I made one batch of 15 and it lasted not even one day... They're just that good!
You can also try to top them with some peanut butter because come on, everything in life is better with peanut butter.

The extra special use for the waffle iron I got for christmas!

Hi everyone!

Today's recipe is made in a waffle iron but it's not waffles it's actually... Brownies! Chocolate, of course. Chocolate is good in everything, but especially in brownies.

I got this super simple square waffle iron for christmas (my boyfriend spent the entire year listening to me whine about how much I wanted one and surprised me with it) and obviously since then I have been making waffles non stop. One of these day's I'll share my go-to plain waffle recipe but today is something special... Today we're making (macro friendly - as almost always) Waffled Chocolate Brownies!


(The pictures are kind of nasty but all I had available was my iPhone so... Sorry!)

The recipe makes 4 square waffle brownies (or 2 large belgian ones, depends on your waffle iron), it's super fast and available and the macros are awesome:
87kcal
14g Carbs
1g Fat
6g Protein
(6g fiber)

Good for eating 1 or 2 if you're cutting calories, good for eating 17 if you're bulking.



So here's the recipe:

What you’ll need:


  • 60g (1/2 a cup) self raising flour
  • 30g (1/4 of a cup) cocoa powder
  • 40g (3 1/2 tbsps)Stevia Sweetener
  • 60g (1/4 of a cup) egg whites
  • 120ml (1/2 a cup) skim milk
  • 50g (4 tbsps) Sugar free applesauce



How to make them:


  1. Mix dry ingredients in a bowl until dry mix is uniform;
  2. Add in wet ingredients at random;
  3. Mix it all up until it’s silky smooth;
  4. Drop in batter in iron, close iron, cook up;
  5. Add all sorts of toppings (I used sugar free plain yogurt sweetened with Stevia and Reese's Peanut Butter toppings) and EAT!
