Made these this morning and they are almost gone... Must mean they are REALLY good!
All you're going to need is: self-raising flour, room temperature butter, 2 eggs, brown sugar, sweetener, vanilla extract, chocolate chips and hazelnuts, and you only need to use one bowl.
They take about 10 minutes to prepare and bake for 20/25 so they are super fast to bake and totally worth it, they are delicious and moist and yummy.
So let's cut to the chase, here's the recipe:
Ingredients:
- 250g / about 2 cups self-raising flour
- 2 large eggs (room temperature)
- 100g / a little under 1/2 of a cup room temperature butter
- 100g / a little under 1/2 of a cup light brown sugar
- 50g / 1/4 of a cup sweetener of choice (I used Stevia powder)-
- 20ml / 1 tbsp vanilla extract
- 5 tablespoons (or 70g) chocolate chips (I used Hershey's semi-sweet)
- 50g / about 3/4 of a cup hazelnuts
- Pinch of salt
Directions:
- First pre-heat your oven to 180ºC / 350ºF and prepare a rectangular baking tray;
- In a stand mixer turned on high speed mix your sugars with your butter until it's all light and fluffy;
- Turn the speed to the lowest possible and mix in vanilla extract followed by the eggs one at a time;
- Sift together flour and salt and then add into the mix slowly so it doesn't lump;
- Turn off the mixer and with the aid of a spatula or spoon incorporate chocolate chips and roughly chopped hazelnuts (or whole if you prefer);
- Place in the tray spreading it to fully cover the base of the tray and put in the oven for about 20/25 minutes - NOT MORE or they will be dry. You can insert a toothpick and it should not come out clean, you want it to come out a like if it was a little undercooked;
- Let cool completely in the pan, cut into squares and serve.
